So today i made some cacao and coconut granola, from my Niomi Smart recipe book called ‘Eat Smart’
I thought i’d share the recipe with you guys as i really like it.
First of all, the ingredients;
4 tbsp coconut oil
4 tbsp maple syrup
4 tbsp unsweetened almond milk
30g / 1/4 cup raw cacao powder
300g / 3 cups rolled oats
30g / 1/2 cup coconut flakes
100g / 1/2 cup quinoa, rinsed
25g / 1/4 cup desiccated coconut
30g / 1/4 cup raw cacao nibs
For this, i had no coconut oil so i used sunflower oil, also i used normal almond milk not unsweetened, but it all turned out really well.
First of all make sure you preheat your oven to 170°C/325°F/gas 3.
Next, take all your dry ingredients and mix them together, i also didn’t have a mixing bowl so i had to improvise but it worked all the same.
Cacao nibs, rolled oats, desiccated coconut, coconut flakes and the quinoa.
Next, add coconut oil to a saucepan on a low heat until it melts. In my case i used sunflower oil and just heated it till it got warm. Then add the almond milk, maple syrup and cacao powder and mix together, then take off the heat.
Then add the wet and dry ingredients together and stir it up.
Once its all mixed together, place the granola onto a baking tray and press it down, put it in the oven for around 20-30 mins. Stirring it up every 10 mins to make sure it all cooks even.
That’s the granola all done. so simple. I didn’t have a nice jar to put it in but a Tupperware container is just as good.
